Last weekend to celebrate the AFL Grand Final we had a party at a mates places …. the beers were flowing but more importantly the lamb was rotating on the spit.

With the belly stuffed with spuds, peppers, onions, garlic and all manner of herbs and spices the only thing left was to stitch it up and get it spinning

A little over 2 hours later and it was pretty much done.

Believe you me, It tasted every bit as good as it looks.

Wow. Normally I don’t go for these “whole-animal-roasting-on-a-spit” dealies but that looks so well prepared and I can only imagine all the flavours it has thanks to the vegetables and spices stuffed inside…

Wow this looks tasty.. and not horrible, no.. You haven’t seen horrible stuff.. When alive lamb is getting tied onto a tree upside down and then its neck is cut and you look how it is suffering.. that is horrible..

We used to do this back in the old country. When a party was going on, they would string up the goat or lamb and slit its throat. Once the beast was dead, they would clean it and cut it up. In Jamaica very few parts of the animal is thrown away. The parts are slow cooked until evening when the party gets underway.

My god that is gorgeous!
I would like to try lamb this way. I’ve never had it roasted. I generally bake it and have a side of mint sauce with it.
